The True Thyme belongs to the family of the mint family. As a wild plant you can find it in hot Mediterranean countries. The main growing area is Turkey with a share of up to seventy percent of the world's annual production. The evergreen, low-growing shrub prefers sandy soil and stony slopes; it blooms in white, pink or delicate purple.
Thyme oil is obtained by steam distillation, for which the freshly flowering herb is used. One liter of essential oil requires about fifty kilograms of thyme.
The main ingredients are: thymol, carvacrol, menthene, cineole, pinene, cymene, linalool, borneol, flavonoids, salycilate, coumarins, tannins and bitter substances.
