Sodium Copper Chlorophyllin
Chlorophyllin is a semi-synthetic, water-soluble derivative of chlorophyll. For this purpose, chlorophyll is extracted from alfalfa (Medicago sativa) and nettles (Urticaceae) and synthesized to chlorophyllin. Enrichment with copper creates the water-soluble Sodium Copper Chlorophyllin , an approved food coloring E 141 (ii)
